


Banana Pancake
Ingredients:
--1 mashed banana
-1 tablespoon coconut oil
-1 egg
-1 tablespoon coconut flour
Method:
-Combine mashed banana, coconut flour and egg in a bowl
-Melt oil on a saucepan
-Once melted, add the batter to the saucepan and cook on one side for 2-3 mins or until you see bubbles
-Flip over and cook for a further 1-2 mins
-Add honey or peanut butter (or both) or another topping of your choice an enjoy!

Berry Smoothie
Ingredients
-1 cup of fresh or frozen mixed berries
-1 cup of almond milk (or you can use protein powder and water)
-1 tablespoon flaxseed
-1 tablespoon of peanut butter or any nut butter of your choice
-1 tablespoon of honey or maple syrup for a vegan version
Method
-
put all ingredients in a blender and blend on high for 45-60 seconds and enjoy!

Mediteranean Omelette
Ingredients
-3 eggs (1 whole egg and 2 egg whites)
-1 tablespoon of sliced black olives
-1 handful of freshly cut basil
-2 small chopped mushrooms
-1 small chopped tomato
-1/4 chopped red onion
-1 tablespoon of coconut oil
Method
-Crack eggs into a mixing bowl, separate the egg whites from 2 of the eggs as you are cracking
-Whisk eggs
-Place all other chopped ingredients into the egg mixture, mix well
-Heat up a small saucepan with coconut oil
-Pour the mixture into the saucepan and cook on low heat for 5 minutes or until egg is cooked
-Fold the omelette in half and continue to cook for a few minutes
Serve on a plate

Morning oats
Ingredients:
-1/4 cups oats
-1 cup of your choice of milk (I use almond)
-1 tablespoon of flaxseed or chia seeds
-4 dried dates chopped into small pieces
-1 teaspoon of peanut butter
-1 teaspoon of cinnamon
Method:
-Combine together in a bowl and mix well
and enjoy!

Choc Banana smoothie
Ingredients:
-1 banana
-1 tablespoon raw cacao
-1 tablespoon desiccated coconut
-1/4 avocado
-1 scoop chocolate protein powder (optional)
-1 cup of your choice of milk
Method:
-Combine all ingredients in a blender, blend for one minute and enjoy!

Smashed Avocado
Ingredients:
-
2 slices of sourdough bread
-
½ avocado
-
1 teaspoon chia seeds
-
½ of a fresh lemon
-
1 cup of sliced mushrooms
Method:
-Toast the sourdough and heat up a pan to cook the mushrooms
-Add coconut oil to the pan and cook mushrooms
-While bread is toasting, mash the avocado in a bowl and squeeze the juice of the lemon into the avocado and mix well
-Add the chia seeds and mix again
-Place avocado on toast and mushrooms on top
