Mexican Salad Bowl

Ingredients:

-1/4 can of black beans

-1 lebanese cucumber

-1/4 red onion

-1/4 capsicum

-1/4 avocado

-1/2 cup cooked quinoa

-1/4 grated carrot

-1 tablespoon salsa

Method:

-cut and prepare all ingredients and place in bowl however you desire and enjoy!

Add in any desired condiments such as salt, pepper or spices. For this salad I used mexican spice mix and chili powder. This is a single serve

Sundried Tomato Salad

Ingredients:

 -1 jar of sundried or semi-dried tomatoes

-1 grated carrot

-1 chopped red onion

-2-3 small chopped mushrooms

-2 cups of baby spinach

-1 chopped avocado

-2-3 tablespoons of balsamic vinegar

-2 tablespoons of olive oil

 

Method

-combine all chopped ingredients in a large salad bowl

-dress with olive oil and balsamic vinegar

This serves 4-6 people

Zucchini Slice

Ingredients

 

-6 eggs

-2 grated zucchini's

-1 grated carrot

-1 diced onion

-1/4 cup coconut flour

-1/4 cup coconut oil

Method

-Combine all ingredients in a bowl

-transfer into a baking dish lined with baking paper

-Bake for 15-20 mins or until browned at 180 degrees celsius

You can also add diced bacon if you would like to

This also makes a good snack or dinner!
