Quick and easy banana pancakes

Mornings can be rushed and sometimes it’s easy to forget about a nutritious breakfast as we rush out the door, coffee in hand.

This banana pancake recipe is quick, easy and the mixture can be made the night before and in fact, it only requires 3-4 ingredients. Ensuring you have a nutritious breakfast with balanced nutrients, including a form of carbohydrate, a form of good fats and a form of protein can set you up for a good day, help you to think more clearly and get the most out of your day. This recipe has a combination of all the things that you need to set yourself up for a successful day and the bonus is that its kid friendly! My kids love to eat this for breakfast.

So the recipe is:

Ingredients:

-1 banana

-1 egg

-1 tablespoon coconut oil

-1 tablespoon linseed meal (optional)

Method:

1. Mash the banana in a bowl

2. Add the egg and linseed and mix together

3. Melt the coconut oil on a pan and pour mixture on

4. Flip over when one side is cooked

5. Cook the other side and serve with a topping of your choice (a drizzle of honey or peanut butter is lovely!)

Steps 1 and 2 can be done the night before to save you time in the morning but honestly, this whole recipe can be made in 10 minutes.

I have played around with it as well, adding protein powder, coconut flour and almond milk or an extra egg. So feel free to play around with the ingredients. It will work as long as the batter isn’t too dry, so if you add a type of flour, add a type of liquid to mix it in.

The good thing is that the basic recipe only requires 3 ingredients.
