


Protein Berry Cookies
Ingredients:
-1/2 cup coconut flour
-1 cup of frozen berries
-3 tablespoons of honey
-1 teaspoon of vanilla essence
-3 scoops of plant based protein powder
-2 tablespoons of almond meal
-1 cup of oats
-2 eggs
-1/2 cup of almond milk
Method:
-Mix all ingredients together, add frozen berries last
-Bake for 15 mins on 180 degrees Celsius or until the cookies look brown

Vegan Coconut slice
Ingredients
-
½ cup of dried blueberries
-
1 cup of dried dates
-
1 tablespoon of cinnamon
-
½ cup of almond meal
-
½ cup of cashews or macadamias
-
2 tablespoons of coconut oil
-
½ cup desiccated coconut
Method
-
Put dates and nuts in a food processor, blender or cut very finely
-
Combine with all other dry ingredients
-
Microwave coconut oil until melted and pour into dry ingredients
-
Mix well
-
Put mixture into a slice tin, lined with baking paper and press down
-
Sprinkle desiccated coconut on top and refrigerate for one hour
-
Cut into snack size pieces and enjoy

Vegan Chocolate Protein balls
Ingredients
-
¼ cup of coconut flour
-
¼ cup of almond meal
-
2 tablespoons of cocoa powder
-
3 scoops of plant based chocolate protein powder
-
3 tablespoons of maple syrup
-
3 tablespoons of melted coconut oil
Method
-
Combine all dry ingredients an mix well
-
Add maple syrup and coconut oil (make sure to melt the coconut oil in the microwave or a saucepan)
-
Roll into evenly sized balls, coat in desiccated coconut if you want to and refrigerate for one hour

Beetroot hommus
Ingredients:
-1/2 can chickpeas
-1 diced roasted beetroot
-2 tablespoons tahini
-2 tablespoons lemon juice
-1/2 teaspoon salt
-1/2 teaspoon minced garlic
-1 teaspoon turmeric
-1/4 water
Method:
-Blend all ingredients together in a blender and enjoy!
I personally love this as a snack on corn thins or in salads!

Choc Banana smoothie
Ingredients:
-1 banana
-4 dried dates
-300ml almond milk (or any other milk of you preference)
-1 tablespoon raw cacao
-1 handful of cashews
Method:
-put all ingredients in a blender an mix
Enjoy!

Zucchini slice
Ingredients
-6 eggs
-2 grated zucchini's
-1 grated carrot
-1 diced onion
-1/4 cup coconut flour
-1/4 cup coconut oil
Method
-Combine all ingredients in a bowl
-transfer into a baking dish lined with baking paper
-Bake for 15-20 mins or until browned at 180 degrees celsius
-cut into snack size pieces and enjoy!
You can also add bacon or ham if desired.
